Set Menu

We grind fresh flour from ecologically clean grain Black Bread in the morning. We cook fresh paneer from farm milk. We hand-pound our homemade masalas. As much as possible, we cook from vegetables from the Vasilki eco-farm.

We DO NOT use refined products!

Dinner

12:00 - 17:00 / Cost - 2000 rub.

Momo soup:

Kashmiri curd soup with curry leaves and Tibetan vegetable momos (ravioli).

Tali:

Dosa is a thin rice and buckwheat flatbread filled with potatoes, spinach (or nettles, depending on the season) and homemade garam masala.

Coconut chutney is a sauce made with homemade yogurt, coconut flakes, ginger and curry leaves.

Tomato chutney is a sauce made with cashews and tomatoes with homemade masala.

Sambar is a South Indian curry made with lentils, seasonal vegetables and homemade sambar masala.

Sprouted mung bean salad with seasonal vegetables and a dressing based on olive oil and kafari lime leaves.

Dessert:

Sweet Dosa filled with farmhouse curd, saffron, green cardamom and caramelised almonds. Served with masala tea.

18:00 - 23:00 / Cost - 3500 rub.

For this Thali we have been collecting recipes over many years, from different families. The main focus is on the cuisines of the northern states - Kashmir, Rajasthan, Himachal, Pradesh.

Soup:

Himachali Tomato Soup with Kachore (Whole wheat spelt patty stuffed with spinach, barley and paneer)

Tali:

Kerala Green Sabji made from summer seasonal vegetables.

Nettle curry with paneer (chickpea slices with black cardamom and kalonji).

Dal Moscow-Delhi of tur, chana and masur lentils with tomatoes, asafoetida and chilli.

Aloo Rasam - wood fired potato slices with rasam masala and mint pesto.

Paneer Tikka is a homemade Indian cheese grilled on coals with a spicy beetroot filling.

These dishes are served with Kashmiri Basmati Rice Pulau with whole grain spices and dried fruits, Pink Raita, Yangon Salad and Charcoal Naan with Garlic and Spring Onions with the Thali.

Dessert:

Cashew ice cream with ginger, lemon, strawberry sauce. Served with masala tea!
